The sink is made from stainless steel and the 18 gauge refers to the thickness of the metal.
If it was 16 gauge, the metal would be slightly thicker, and if it were 20 gauge, it would be thinner.

Know What to Look for When Shopping for a Stainless Steel Sink
Stainless steel sink are truly the best kind of fixture you can add to your kitchen. They are durable, long lasting, and easy on the eye. But before heading out to the store and picking one up for yourself, be sure to check out these tips to help you find the right one.
Choose a thicker gauge
When buying a stainless steel sink, buying one with a thicker gauge ensures quality. These fixtures are manufactures in a variety of thickness level and you can certainly benefit from one that is thicker and tougher. Since this fixture will be likely subjected to everyday abuse, picking a thicker sink ensures durability and toughness.
Those with gauges around twenty are vulnerable to dents and damages. Remember that when buying a stainless steel sink, the lower the number, the higher the gauge and the thicker it gets.
Furthermore, a thicker sink almost always don’t produce noise when things get thrown in it. Thin gauge ones, on the other hand, will likely produce noise when you drop something on it. So when you’re looking for the right one, choose a fixture that is below an 18 to 20 gauge.
Choose the best steel
In order to be truly stainless, chromium and nickel should be added to the metal. Poorly made sinks are easily susceptible to corrosion. To avoid this, make sure that the fixture has nickel in it.
Chromium, on the other hand, is also crucial to ensure that the sink is strong and can withstand wear and tear. Furthermore, chromium gives this fixture its shine.
Generally, what you want is a fixture that contains something between 8 to 10 percent nickel and at least 18 percent chromium. You should avoid sinks that have been glossed in order to look shiny. While they may look good, you cannot guarantee its durability and if the correct mixture of nickel, chromium and other metals is used.
Choose one depending on usage
Once you decide on the grade and components, it is also important to include the overall function of the sink. There are several types of these sinks manufactured in varying designs and style; and each has its own advantages. If you tend to cook regularly, for instance, choosing a multiple basin stainless steel sink is better. A sink with extra deep basin is also great for large pots and effective food waste disposal.

Stainless steel doesn't make very good knife blades. Try using tempered steel or carbon steel.
